Make this soup as brothy or as hearty as you like—there's no need to measure the vegetables. Start the soup while you fold the wontons so everything is ready around the same time.

Wonton Directions

Drain and finely dice the water chestnuts (1 can). Combine them with the Beyond Ground (1 lb), sesame oil (1 Tbsp), soy sauce (4 Tbsp), and water (1 tsp) in a bowl. Mix until evenly combined.

Fill a small bowl with water for sealing the wrappers. Place a small spoonful of filling in the center of each wrapper, leaving enough room to seal the edges. Dip a finger in the water and lightly moisten the edges.

See the folding guide in Extra Notes below for square wrappers. Fold one corner over to the opposite corner to form a triangle. Gently press out any air around the filling, then press the edges firmly to seal. Bring the two bottom corners together, moisten one corner, and pinch them together. For other wrapper shapes, fold in half and seal the edges securely.

Bring a separate pot of water to a boil. Cook the wontons in batches of 6-8 for 7-10 minutes, until they float and the filling is cooked through. Lift them out with a slotted spoon and repeat with the remaining wontons.

While you fold the wontons, bring 6-8 cups of broth to a boil in a large pot.

Add as much cabbage, carrots, and celery as you like. Cook at a gentle boil until the vegetables reach your preferred tenderness.

Ladle the soup into bowls and add the cooked wontons. Top with thinly sliced green onions and a splash of soy sauce, if desired.
Extra Notes
The vegetable amounts are flexible: use less for a brothier soup or more for a heartier bowl. Add extra broth if needed.
Square wrappers work well for the folding method above, but other shapes work too. Choose egg-free, vegan wrappers.
