Heat oil (1 Tbsp) in a skillet then add diced onion (½ cup) and minced garlic (1 Tbsp). Allow to cook for 2-3 minutes then add the Beyond Burger. Season with taco seasoning (2 Tbsp) and cook Beyond Burger (1 pack) until browned.

In a separate pot cook spaghetti (10 oz) according to the package directions. When fully cooked drain and return to the pot. Add seasoned Beyond Burger and Rotel (2 cans) to spaghetti (10 oz) and mix together well.

Preheat oven to 375 degrees F. Add spaghetti (10 oz) to a casserole dish. Top with cheese (1 cup) and place in the oven for 10 minutes until cheese is melted and bubbly. Top with cilantro (2 Tbsp) and serve!
