Mince garlic (1, minced) and mash to a paste with salt using a large heavy knife. Transfer garlic paste to a large bowl and stir in tamari (2 Tbsp), hoisin (2 Tbsp), maple syrup (2 Tbsp), sesame oil (2 tsp), scallions (1, chopped), sesame seeds (1.5 Tbsp) and cayenne (A pinch). Add protein to sauce, stirring to coat.
